Rice Noodle Stirfry Fail

I made a Thai stir fry and it didn’t come out as good as I would have liked. Some mistakes:

The noodles I bought from T&T weren’t that fresh. When I microwaved it and started separating it they started breaking.

After stir frying the noodles got really gummy. I also stir fried too many things in the wok overloading it.

The result was kind of a mushy and bland noodle

Lessons learned

  • Be sure to buy fresh rice noodles or just make a stir fry.
  • For 600 grams of noodles use 2 tablespoons each of soy sauce, fish sauce, vinegar, and sugar
  • Be sure to only stir fry a small portion at a time
